Antioxidant Activity of Phenolic Extract from Ginger (Zingiber officinale Roscoe) Rhizome

In the present study, the antioxidant activity of phenolic extract from ginger (Zingiber officinale Roscoe) rhizome were investigated, employing two in-vitro established system which included the total antioxidant activity in ferric thiocynate (FTC) system and reducing power method. It was found that that PEGR had stronger antioxidant activity to inhibit the oxidation of linoleic-acid in the FTC system than standards vitamins C and E. PEGR had the highest inhibition (88.5%) followed by vitamin E (78.54%) and C (70.32%) at 100 μg/ml in the FTC system. Futhermore PEGR showed strong reducing power activity. These data suggested that PEGR could be potential source of natural antioxidant.
