Studies on the Variation of Composition in Muscles of Buffaloes and Zebu Cattle

There are 61 million buffaloes in India, out of which 0.85 millions are slaughtered annually producing 117,000 tonnes of meat. Most of the buffaloes are slaughtered at the end of their productive life.The limited work conducted elsewhere had demonstrated the palatability, nutritive value and compares favourably with other animal meats and meat products, apart from the acceptability of buffaloe meat by large sections of meat consumers.
