Abstract

Ultrasonic velocity, density and viscosity have been measured for fructose in double distilled water, in 1M NaCl and in 1M MgCl₂ at 25°C at various concentrations, with a view to investigate the exact nature of the molecular interactions. The radius of fructose molecule in double distilled water, in 1M NaCl and in 1M MgCl₂ solution is determined by Einstein's equation using viscosity of the solutions. The results have further been used to interpret the molecular interactions in the solutions.
