Glutamate in the free form is abundantly found in all natural foods and it has been used as a flavour enhancer for more than thousand years across the world. It is a multifunctional amino acid. Around 50g of glutamate is synthesised in the body and 20 to 40 g is obtained from the food every day. In the central nervous system glutamate is the dominant excitatory neurotransmitter as it regulates several neuronal related functions in the body. Human and animal studies indicate that glutamate is the major oxidative fuel for the gut and the dietary glutamate is extensively metabolised by the intestine.References

Childhood obesity is a complex condition that results from an imbalance of energy intake and expenditure. The adipose tissue mass is enlarged out of proportion to other body tissues in this condition. In normal growth, the greatest level of fatness (-25%) occurs at the age of six months. In lean children, the fat ceil size decreases. However, this decrease does not occur in obese children. Recent data from the World Health Organization revealed that the prevalence of childhood obesity worldwide is 16.5 per cent and in India it accounts to 12.4 per cent in boys and 9.9 per cent in girls. According to Knoon, the prevalence rates of overweight end obesity among children in India are 12.8 and 10.3 per cent respectively. An obesogenic environment which encourages excess food intake plays a crucial role in the epidemic of childhood obesity and eating disorders.- Value Addition in Biscuits Using Whey Protein Concentrate (WPC)

Women need to attain good nutritional status before, during and after pregnancy to optimize maternal health and reduce the risk of birth defects and chronic disease in their children in later adulthood. Neural Tube Defects (NTDs) are the most common congenital malformation in Indian population. NTD has been the subject of more studies than any other congenital anomaly not only because of the ease with which this disorder can be detected, but also because of their importance as a cause of fetal death and malformation where strong interaction between environmental and genetic factors in causation has been documented.- Incorporation of Dehydrated Plantain and Drumstick Flowers into Recipes and their Acceptability

Plant foods play an important role in the diet as they provide essential micronutrients and minerals. Among the various parts of the plant, vegetable flowers play an important role with good nutrients and therapeutic values by acting as a stimulant, tonic, diuretic and cholagogue (an agent causing increased bile secretion). Drumstick flowers were used in treating cold and anaemia and reported to contain powerful antibiotic pterygospermin which has fungicidal properties. Plantain flowers help in increasing the progesterone hormone which reduces excessive bleeding and menstruation problems.- Book Review
