





The Effect some Electrolytes on the Stability of the Emulsion at Oil-Water Interface

The stability of Dansyl-L-Methionine stabilized liquid paraffin-in-water emulsion in presence of various electrolytes has been studied by measuring electrokinetic potential microelectrophoretically. The interaction energies have also been computed by summing up attractive and repulsive energies to explain the stability of the system. The flocculation of the system has been studied haemocytometrically, by counting the monomers and dimers individually. From the number of monomers and dimers rate of flocculation, rate of coalescence and degree of aggregation have been calculated.
