Genotoxicity Testing of Some Commonly Used Condiments in Saccharomyces cerevisiae

Most of the human cancers are believed to be due to exposure to environmental chemicals. Since most of the environmental carcinogens are also mutagens, they can be detected in short-term tests for mutagenicity. These types of test systems have been widely used to assess the genotoxicity of industrial and agricultural chemicals. Recently, there has been increasing concern about the mutagenic and/or carcinogenic potential of the chemicals in our food products. A relationstiip between diet and certain cancers is known, and many plant products are known mutagens and some are carcinogens.
