Zinc deficiency, encountered throughout the world in man and domestic animals adversely affects the nucleic acid and protein metabolism; thereby affecting the growth promoting ability of dietary protein. Protein efficiency ratio (PER) which is the most common method used for evaluation of protein quality has been reported to be influenced by a number of nutritional factors. However, little attention has been given with respect to zinc deficiency.
