Occurrence of Trace Toxic Metals in Commercial Food Colours

Commercial samples of food colours and their preparations have been examined for toxic metals like lead, cadmium, copper and zinc by AAS and chromium and arsenic by spectrophotometry not only for safety against these toxicants but also for regulatory compliance. It was found that some of the samples (having excessive metal toxicants) transgress the statutory limits of PFA Act and rules. The genesis of the problem has been discussed.
