The first edition of volume I by W.B. Van Arsdel (1963) is based on a large number of U. S. D. A. short publications brought out by the author after World War II which contained a lot of basic information on food dehydration and gave excellent examples of application. The text is a good blend of theory and practical experience which the author gained in good measure as adviser to the U. S. Dehydration Industry which made such spectacular strides during World War II.
