Comparative Study of Lipids of Different Varieties of Maize (Zea mays)

Maize (Zea mays L.) is one of the important cereal crops grown extensively in the Indian sub-continent. It is not only used as food, feed and fodder but also in industry for variety of purposes. A systematic study of lipids of cereals has been undertaken in our laboratory for some time past. Pruthi and Bhatia, Sukhija et al and Paul et al have reported the lipid components of bajra, barley and jowar respectively. The present paper deals with the comparative study of lipids of some new varieties of maize evolved by Punjab Agricultural University, Ludhiana.
