Nutritive Analysis of Leaves, Pods, Seeds and Physiochemical Properties of Starch in Tubers of Vigna capensis Walp

Vigna capensis Walp commonly known as jungli mung (wild cowpea) an edible, monsoon perennial species occurs wild in the hills of Western ghats. It bears single tuber per plant at junction of stem and ischolar_main with 7 to 8 cm long and 2 to 2.5 cm broad tubers. Tribal people eat the tuberous ischolar_mains and seeds in the days of scarcity. The young shoots are eaten as a vegetable. The nutritional evaluation of leaves, pods, seeds and physiochemical properties of tuber starch remain uninvestigated and hence the present investigation was undertaken.
