Pulses play an important part as a source of dietary protein, energy, minerals and vitamins for the predominantly vegetarian population of India. Consumption of germinated pulses is a common household practice since long and is known to increase the nutritive value. The sprouted beans are widely consumed and relished in Maharashtra.
