Development of Ready-To-Eat Extruded Product for Rural and Urban School Children

In the recent past much emphasis has been given to reduce the incidence of nutritional deficiencies affecting school going children in developing countries. Efforts are being made to combat nutritional deficiencies by supplementary feeding incorporating low cost locally available food around the dietaries of children by making up the deficiencies. It has been recommended to add deficient nutrients such as vitamin A, calcium, and iron to the supplementary foods to make good the deficiency in their habitual diets. Recently there has been a noticeable emergence of a middle class society which can afford to consume processed foods.
