Suitability of Finger Millet Flour in the Preparation of Chocolate Cake

Finger millet or Ragi (Eleusine coracona) is an important millet which is cultivated on a large scale in the drier parts of south India. It is also an important food crop in semiarid areas of Africa. It is less expensive than other cereals, more nutritive and is the staple food of some population in the region where it is grown. Ragi is usually converted into flour and variety of preparations including porridge are prepared from it. The grain is also malted and the flour of the malted grain is used as a nourishing food for infants and invalids.
