Studies on Acid and Alkaline Phosphatases in Relation to Pulses as Dietary Protein Sources

The tissues and plasma contain two types of non-specific phosphomonoesteraces; one exhibiting the optimum activity around pH 9 to 10 and the other around pH 5.0 and these are designated as alkaline and acid phosphatases. A number of reports are available which indicate that the levels of alkaline phosphatases may undergo changes depending upon the status of nutrition with respect to protein, fat, calcium and phosphorus.
