The reduction of food loss is an important part of the effort to meet the nutritional needs of the world's expanding population. Food loss is usually minimized by the use of chemicals such as anti microbials, insecticides, and sprout inhibitors, but such chemicals (or their metabolic or reaction products) may themselves be a source of hazard. Increasing attention has therefore been paid to the use of irradiation with gamma rays of fast electrons for food protection and to determining the wholesomeness of such irradiated food.
