Indian diets are low in protein and calories. About 15 to 30 per cent of the protein needs are met by legumes in the form of dhals. The two commonly consumed dhals in India are Red gram and Black gram. These two pulses, when combined in proper proportions with other low cost protein-rich indigenous foods, can improve the protein quality of vegetarian diets significantly.
