This volume contains the papers presented at the Fifth Biennial Symposium on Foods: convened in the Department of Science and Technology at Oregon State University in 1968. At this symposia the physical and chemical structure of carbohydrates, their reactions, their role in nutrition and disease and their place and importance in food industries were considered by a number of leading food chemists and technologists.
