Since about 15 years ago, affluence has brought about some major changes in man's environment, some of which may reasonably be associated with the rapid rise in the incidence of coronary heart disease. Oi the two most important, one comprises those changes in work, transport and leisure which are responsible for man's increasing physical inactivity, and the second is the availability of highly palatable foods which, as Yudkin points out, "he is tempted to eat with no reference to his nutritional needs, notably sugar in various forms".
