Today the villages which are the backbone of the national economy present a picture of poverty, malnutrition and other unhealthy conditions. Diet surveys conducted over the past decade or two have clearly indicated two dominant features of the Indian diets namely, the preponderance of cereals and gross inadequacy of protective foods.
